Sauté 2 cloves chopped garlic in Olive Oil.
Add 1 pound diced Chicken Pieces, Shrimp, or Scallops. Cook until done. (Shrimp cooks very quickly, cook only until pink.) Add salt to desired taste.
Add hot peppers, chopped into small pieces (1 banana pepper, seeds removed and 3 tiny
red hot chili peppers). Cook for 1 minute, stirring and coating meat mixture.
Add 1 can diced tomatoes and chopped vegetables (mushrooms, green peppers, onions,
okra) and cook until crisp tender, approximately 5 minutes.
Add 4 ozs. Crumbled feta cheese.
Serve immediately over cooked pasta and top with grated fresh parmesan cheese.
