8 Large Idaho Potatoes
8 Hard Boiled Eggs (Grated)
2 Large Onions (Chopped Fine)
2 - 8 Oz. Size Pimentos (Cut-up)
2 Packets Sweet & Low
1 Quart Mayonnaise
1/2 Cup Sweet Pickle Relish

Directions:
Directions:
Cook potatoes until fork tender, then peel and cut up. Add grated hardboiled eggs, chopped onions, pimentos (cut up), sweet pickle relish and mayonnaise. Mix all up real good. Sometimes I add sweet pickle juice until the right consistency.
