½ c. unsalted butter
1 c. granulated sugar
4 eggs, separated
1 tsp. vanilla extract
Zest of 1 lemon
1 c. sifted all-purpose flour
Confectioner’s sugar (optional)

Directions:
Directions:
Preheat oven to 400º F

Grease the Madeleine molds with butter.

In a small bowl, cream together the butter and sugar, and add the egg yolks one at a time, beating well until the mixture is smooth.

Add the vanilla, lemon zest, and flour, and mix well. In a large bowl, beat the egg whites until they form soft peaks. Fold the egg whites into the batter, a little at a time, until fully blended.

Fill each mold two-thirds full and bake until the cakes have risen and are moderately browned (about 12-14 minutes). Remove from pans to a wire rack and allow to cool. Dust lightly with confectioner’s sugar (optional).
