6 Cups White Sugar
1 1/4 Cups Light Corn Syrup
4 Tbl. Cocoa
1 1/4 Cups Evaporated Milk
1/2 Stick Butter
2 Tbl. Vanilla Flavoring
Pinch Salt
Pecan Halves

Directions:
Directions:
In a heavy 4-quart pot, mix sugar and cocoa until well mixed. Add corn syrup, milk and salt. Mix and place on stove. Coat around top of pot with butter to prevent boiling over. Stir on medium low until sugar melts. Turn heat up until mixture rolls (boils) softly. Do not stir until surface becomes shiny. Test in small bowl of water until softball forms.
Have a bowl ready with 1/2 stick butter and vanilla.
Pour hot mixture into bowl. Beat until mixture will spoon out and not spread.
Drop on waxed paper or buttered marble slab. Press pecan half into each piece.


Peanut Butter Fudge:
Substitute 3 cups of white sugar with 3 cups of brown sugar. Do not add cocoa. Continue as with chocolate, but in final step mix until firm (only until slightly stiff). Add 1-cup peanut butter and immediately pour into buttered 9 x 14 glass baking dish. Let set until cool then cut into squares.

Coconut:
Use chocolate recipe without cocoa. As with peanut butter, in final step add coconut (1 bag or 1 can or as much as you like). Pour into buttered dish.
