2 T Chopped Garlic
1 T Olive Oil
1 1/2 lb Quartered Yukon gold or red potatoes
Cooking Spray
1/2 tsp Sea Salt
1/4 tsp Pepper
1/4 c Fresh Parsley
1/2 tsp Grated Lemon Rind

Directions:
Directions:
Preheat oven to 475

Combine garlic and oil in a small saucepan. Cook untl golden brown. Remove garlic and drizzle oil evenly over potatoes and toss well.

Arrange potatoes in a single layer on a baking sheet sprayed with cooking spray. Sprinkle with salt and pepper and bake at 475 for 30 minutes.

Combine garlic, parsley and lemon rind. Sprinle evenyly over potatoes.
