1 cup sifted all purpose flour
1/4 cup sugar
3 tsp. baking powder
1/2 tsp. salt
3 tbsp. butter
1 cup quick cooking rolled oats
1 egg, beaten
1 cup milk

Directions:
Directions:
Sift together flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse corn meal. Add rolled oats, blending thoroughly. Add egg and milk, all at once, stirring until dry ingredients are just moistened. Fill buttered muffin tins 2/3 full. (can use paper muffin cups). Bake in hot oven (425) 20 to 25 minutes.

Note: For cinnamon-topped muffins, combine 1/3 c. brown sugar, 2 tsp cinnamon and 1 tbsp melted butter. Sprinkle over muffins before baking.
