1 cup finely chopped apples
3/4 cup raisins
1/4 cup chopped nuts
1 tbsp grated orange rind
1/3 cup orange juice
2 cup sifted all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/3 cup shortening
2/3 cup sugar
1 egg

Grease loaf pan about 9x5x3". Wash, peel, core and chop apples; wash and drain raisins, chop nuts, grate orange rind, squeeze and measure orange juice, set aside. Sift flour, baking powder, soda and salt. In separate bowl cream shortening, adding sugar gradually and continue creaming until light. Add egg and beat thoroughly. Add dry ingredients and orange juice alternately to the creamed mixture, blend well after each addition. Add apples, raisins, nuts, and rind; mix well. Pour into greased pan. It should not be more than 2/3 full. Bake in moderate oven, 350 for about 1 1/4 hours. When a toothpick inserted in the centre comes out clean, it is done. Cool slightly before removing from pan.
