2 sticks butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 TLB. Grated orange peel
3 TLB fresh orange juice

2 1/2 cup flour
3/4 tsp. Baking Soda
1/2 tsp. salt
~ ~ ~
1 cup coconut
1 cup pecans (chopped )
1 cup shredded carrots
Icing:
2 cups powdered sugar
1 TLB. orange peel
3 TLB Orange Juice

Directions:
Directions:
Mix butter, sugars, egg, orange peel and orange juice together. Sift flour, baking soda and salt together. Mix together. Fold in coconut, pecans, and shredded carrots. Bake 12 min @ 350.
When cool, spread icing on.
