2 c sliced carrots
1/4 c butter
1 tbsp lemon juice
3/4 tsp ground coriander
1/2 tsp salt
1 lg tomato, cut into wedges
3 firm bananas, cut into chunks
1 tbsp chopped parsley

Directions:
Directions:
Stir-fry carrots in butter in large skillet for 5 mins., or until tender-crisp. Stir-fry in lemon juice, coriander, salt, tomato and bananas. Stit-fry for 2 minutes. Sprinkle with chopped parsley.
