2 lbs stewing beef
4 tbsp fat
1 1/2 tsp salt
1/8 tsp pepper
1 1/2 c onion sliced
1 c carrots cubed
1 c celery sliced

Dumplings:
2 c. flour
1/4 tsp salt
4 tsp baking powder
1 c milk

Directions:
Directions:
Trim fat and coarse tissue from the meat and cut into small pieces. Brown slowing in moderately hot fat in a heavy kettle with a tight fitting lid. Add the onion, seasoning and sufficient liquid to just cover the meat. Cover the kettle. Simmer 1 hour or more if necessary, add the vegetables and more liquid if necessary and simmer approximately another hour. Thicken according to method given for gravies.
Dumplings:
Sift together flour, salt and baking powder. Make a well in the flour, add milk and stir lightly. Drop by spoonfuls into the stew. Cover tightly and boil 12 - 15 minutes
