2 1/2 tbsp tapioca
1/3 c. brown sugar
1/8 tsp salt
1 egg yolk
2 c. milk
1 egg white stiffly beaten
1/2 tsp vanilla

Directions:
Directions:
Combine minute tapioca , sugar, salt, egg yolk and milk. Cook in double boiler for 20 minutes stirring frequently. Remove from heat and gradually fold into stiffly beaten egg white. Add vanilla and chill. Pile in sherbet glasses and garnish with whipped cream and browned coconut.
