On a visit to your favorite meat market, have the butcher fresh cut from a prime pig, 2 to 4 chops, 2 to 3 inches thick. Keep the chops cool until ready to prepare. DO NOT FREEZE.
Virgin olive oil to cover bottom of pan
Flour
Seasoning salt and pepper
2 cups whole milk
1 can cream of mushroom soup
6 strips of lean bacon cooked crisp and crumbled

Prepare a deep pan, skillet, or electric frying pan by giving it a small amount of virgin olive oil making sure to cover the bottom about 1/8" deep with the oil. Raise the temperature of the pan to about 350 degrees F.Quickly sprinkle seasoning salt and pepper on the chops followed by a liberal coating of flour. Place the chops in hot pan and brown all sides very well.

Reduce the heat to medium/low and continue to cook for 1/2 hour. Add 2 cups of whole milk and reduce the heat to LOW, cook for 1/2 hour. Add 1can cream of mushroom soup and crumbled bacon. Cook on low for two hours.

Remove the chops and enjoy the nice gravy left behind, season to taste.

Suggested Accompaniments: Wild rice, Apple Sauce, Fresh cooked green beans, Pineapple and cottage cheese salad served on a bed of romaine lettuce. ENJOY
