1 (1-1/2 lbs.) lobster tail
2 qrts. water
2 T butter
2 T. flour
1-1/2 tsp. dry mustard
1/2 tsp. salt
Dash of red pepper
1-1/2 C. Half and Half (or evaporated milk)
1 (4 oz.) can mushrooms, drained
Paprika
Parmesan Cheese

Directions:
Directions:
Boil water, add lobster tail. Cover and simmer 12 to 15 mins. Drain, rinse with cold water, split and clean. Cut meat into 1/2 inch pieces.

Melt butter in skillet, add flour and seasonings, cook 1 minute. Add Half and Half and cook until thick. Stir in lobster and mushrooms. Spoon into well-greased baking dish. Sprinkle with grated parmesan cheese and paprika. Bake at 400 for 10 minutes, or until lightly browned.
