8 oz. cream cheese
1 tsp. curry powder
4 tsp. fresh lemon juice
101/2 oz. can Beef Consommé
2 tbsp. chopped scallions
6 twists lemon rind

Directions:
Directions:
In food processor blend cream cheese, curry powder and lemon juice. Add half of the consommé and process until smooth. Pour into demitasse cups and chill until firm. Pour remaining consommé over firm cheese base and chill until firm. Garnish with chopped scallions and lemon twist.

Make well in advance because it needs lots of chilling time.
I served this in clear demitasse cups. It was very pretty and surprisingly delicious.
