12 tbsp. goat cheese
1 tsp. each of chopped fresh parsley, tarragon, chervil and oregano
2 tsp. minced garlic
salt and pepper
12 large shrimp, peeled, tail on and butterflied
12 thin slices proscuitto
2 tbsp. oil oil
drizzle of white truffle oil

In mixing bowl, blend cheese, herbs and garlic. Season mixture with salt and pepper. Season shrimp with salt and pepper. Press one tbsp. filling in the cavity of each shrimp. Wrap each shrimp tightly with one piece of proscuitto. In saute pan, heat olive oil. When hot, add the shrimp and sear for 2-3 minutes on each side, or until the shrimp turn pink and tails curl in toward their body. Place on plate, drizzle [or not] with truffle oil.
