2 Tb butter
1/4 cup boiling water
2/3 cup orange juice
4 tsp grated orange rind
1 egg
1/2 to 1 cup sugar (your taste)
2 cups sifted all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup washed fresh or drained thawed blueberries.
2 Tb honey

Melt butter in boiling water in a small bowl. Add 1/2 cup
orange juice and 3 tsp rind. Beat egg with sugar until
light and fluffy. Add sifted dry ingredients alternately with
orange liquid, beating until smooth. Fold in the berries.
Bake in greased fancy 1 1/2 quart baking dish or loaf
pan. (9 X 5 X 3 inches) in preheated 325 F oven for
about 1 hour and 10 minutes. Turn out on rack or
tray. Mix 2 Tb orange juice, 1 tsp rind and
honey. Spoon over hot loaf. Let stand until cold.

NOTE: Can also make as muffins. One recipe makes 1
dozen muffins. Bake at 400 G for 20 minutes and
glaze as above.
