1 large onion. sliced
1/2 green pepper, seeded, minced
1/4 c. olive oil
1 c. long-grain rice
1 lb. can tomoatoes
1 c. water
1 1/2 tsp. salt
1 bay leaf or 1 tbls. minced parsley

Directions:
Directions:
Cook onion and green pepper in oil until soft butnot browned; add rice and stir to glaze. Add tomatoes, water, salt and bay leaf or parsley. Cover, bring to a boil, lower heat, cook 20 minutes until all liquid is absorbed.
