1 lb. of extra lean ground beef
1 tbsp. olive oil
1 c. diced carrots
1 c. diced onions
1 c. diced celery
1/2 tsp. minced garlic
2 cans chicken broth, I also add 1 can of beef broth
1 can whole tomatoes
1/2 tsp. thyme, salt, and ground pepper
3 c..of wide egg noodles, cooked
1/4 c. chopped fresh parsley
sour cream for garnish

In Dutch oven, cook ground beef, breaking up meat with back of wooden spoon, over medium- high heat until browned. Remove meat from pan with slotted spoon; set aside. Add oil, carrots, onions, celery and garlic; cook until tender crisp, 5 minutes. Add broth , tomatoes, thyme, salt, and pepper, and beef, breaking up tomatoes with back of spoon. Bring to boil, reduce heat, cover and simmer for 20 minutes. Just before serving, stir noodles and parsley into soup and heat through. Serve with a dollop of
sour cream.
