2 medium potatoes.
2 carrots.
2 stalks of celery.
1/2 cup diced onion.
1 to 2 bay leaves.
1 can chicken broth.
1 cup milk.
1/2 cup cheddar cheese.

Directions:
Directions:
In small saucepan, add 2 potatoes, peeled & diced. cover with water and cook until tender. Mash with potato masher. Water & all.
Then in another pan, cook 2 diced carrots, 2 diced stalks of celery, 1/2 cup of diced onion, and bay leaves. Cover with water and a little salt and boil until tender. Add mashed potatoes, 1 can of chicken broth, 1 cup of milk. Remove bay leaves. Stir. If too thin, add 1/3 cup of instant potato flakes. Add salt & pepper to taste. Just before serving, add cheese.
