2 c. flour
1 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/4 tsp. salt
4 eggs
11/2 c. salad oil
2 c. sugar
2 c. grated carrots

Cream Cheese Icing

1 (8oz.) pkg. cream cheese
1/2 c. butter or margarine
1 pkg. confectioners sugar
1 tsp. vanilla
1 c. chopped pecans

Directions:
Directions:
Sift dry ingredients. Add eggs, on at a time, to dry ingredients. Add salad oil and sugar: mix well and then add grated carrots. Bake in two 9 in. round pans or three 8 in. pans for 30 min. @ 350.

Icing:
Cream cheese and butter. Add confectioners sugar in 3 parts. Add vanilla and chopped pecans. This is enough icing for 1 carrot cake.
