6 oz pkg orange jello
1 cup boiling water
1 cup orange juice
1 pint lemon sherbet
1 11-oz can mandarin oranges, drained
lettuce leaves

*Fluffy Orange Dressing*
2 3-oz pkgs cream cheese
1/4 cup orange juice
1 Tablespoon sugar
1 Tablespoon grated orange rind
(Beat cream cheese and orange juice together until creamy. Stir in sugar and orange rind. Serve over Orange Sherbet Salad. (yields 1 cup)

Dissolve gelatin in boiling water. Add orange juice and sherbet. Beat with mixer at low speed until sherbet is melted. Chill until thick. Fold in oranges and pour into 1 quart mold. Chill until firm. Unmold on lettuce leaves. Serve with Fluffy Orange Dressing.
