8 ounce cream cheese, softened
2 cups shedded Cheddar cheese (8 oz)
2 4 ounce cans diced chiles (or 1 cup fresh roasted and diced chiles)
1 cup sliced green scallions (optional)
1 cup chopped green olives
8 6 inch flour tortillas (thinner the better)

Directions:
Directions:
Blend cheeses, chilies, scallions and olives. Spread 1/2 cup of the mixture on each tortilla and roll up jelly roll style. Wrap each roll in plastic wrap and chill in fridge for 3 hours.

To serve, cut each roll into 1 inch thick slices. Place on a bed of leaf lettuce for presentation.
