Pumpkin Bread Recipe

1 can pumpkin
3 c. sugar
3 1/2 c. plain flour
1 1/2 tsp. salt
1 tsp. soda
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 tsp. vanilla
4 eggs
1 c. oil
1 c. chopped pecans or walnuts
1 c. golden raisins
1 c. orange juice

Mix dry ingredients in bowl and set aside. Combine sugar, eggs, oil, and pumpkin and beat well. Add dry ingredients 1 cup at a time and mix well. Add vanilla, pecans, raisins, and orange juice. Pour batter into 2 large well-greased, floured loaf pans and bake at 350 for 1 hour. Let cool for 10 minutes before removing from pans.
