1/2 c. All-Purpose flour
1 tbsp. oil
1 c. chopped white onion
1/2 c. chopped celery
1/2 c. chopped red bell pepper
2 tsp. minced garlic
3/4 tsp. dried thyme
1 tsp. Cajun seasoning
1/4 tsp. red pepper (cayenne), or to taste
4 c. Swanson's Chicken Broth
2 c. chopped roasted chicken (from Sam's/Wal-Mart)
1/3 lb. sliced Bryan Smokie-Hollow sausage (cut links lenthwise, then slice -- brown in skillet and drain)
3 tsp. Worcesteshire sauce
1 can diced tomatoes
1 can Rotel tomatoes
1 small box frozen okra
1 lb. shrimp, peeled

Directions:
Directions:
Place flour in black skillet and stir constantly with a whisk until flour is a rich brown (approx. 25 minutes). Set aside to cool. Place large dutch oven over medium heat and add oil. Add chopped onion, celery, bell pepper, and garlic; saute 5-10 minutes until veggies are tender. Sprinkle flour, thyme, Cajun seasoning, red pepper over onion mixture. Mix well and cook for 1 minute. Add chicken broth. Stir this until well blended. Add chicken, sausage, Worcestershire sauce, tomatoes, and okra. Bring to a boil, check taste and add salt if needed. Cover and reduce heat. Simmer for 1 hour. Add shrimp about 5-10 minutes before ready to serve. Serve over white rice.
