1 large can of pineapple (drain and save juice)
2 cups of sifted flour
2 tsp. baking powder,
1/2 c. butter,
1 c. white sugar,
2 eggs (separated),
3 tbls. pineapple juice,
1/2 c. milk,
12 tsp. vanilla,

Directions:
Directions:
Cream butter and sugar together. Add yolks of eggs. Add sifted dry ingredients alternately with milk and juice. Fold into stiffly beaten egg whites. Add vanilla.
In skillet melt 2 tbsp. butter, spread 1 c. of brown sugar on top.
Add drained pineapple. Pour in batter and bake at 350 until done (30 to 40 minutes).
Let cool 10 min., and turn skillet upside down on plate.
