Mediterranean tomatoes:
1 package of grape tomatoes or cherry tomatoes, quartered,
12 pitted chopped kalamata olives,
1/4 c. snipped fresh parsley,
2 tbls. capers,
2 tbls. red wine vinegar,
2 tsp. extra virgin olive oil,
1 tsp. dried basil
4 boneless, skinless chicken breast halves,
1 can of chicken broth,
1 cup dried orzo pasta (or rosamarina pasta),
1/2 t dried basil,
1/2 cup crumbled feta cheese

Toss all the ingredients for the mediterranean tomatoes in a bowl; set aside. Heat a large, non-stick skillet over medium high heat. lightly
coat with non-stick cooking spray. Cook chicken smooth-side down for 2 minutes. remove chicken. in same skillet combine broth and orzo. Increase heat to high. Bring to a boil. Place chicken, brown side up, on the orzo. sprinkle w/ basil. reduce heat, cover, and simmer for 12 minutes, when the orzo is tender and the liquid is absorbed. To serve,
spoon orzo onto each plate. top w/ chicken, tomato mixture and feta cheese.
