10 c chopped unpeeled zucchini
4 c chopped onion
1 large red pepper, chopped
1 can chopped green chilies
3 T pickling salt
3 c vinegar
1 T turmeric
4 tsp celery seed
1 tsp pepper
1/2 tsp nutmeg

Directions:
Directions:
In large container combine, zucchini, onion, red pepper, chilies and salt. Stir well. Chill overnight. In the morning rinse thoroughly and drain well (I use a clean dish towel to squeeze out water). In large kettle combine remaining ingredients. Bring to a boil. Add zucchini mixture. Simmer 10 minutes. Ladle into jars. Process in hot water bath 10 minutes.
