2 c sugar
1/2 c water
1/4 tsp cream of tartar
4 egg whites (room temperature)
1 1/2 c confectioner sugar, sifted

Directions:
Directions:
Boil granulated sugar, water, cream of tartar to 240. Brush sides of pan with warm water to prevent crystalization. Brush again halfway through but do not stir. Meanwhile whip egg whites 7 minutes at high speed. Add boiled sugar mixture slowly beating about 3 minutes at high speed. Turn to second speed. Add confectioner sugar. Beat 5 minutes more at high speed. Use all frosting. Frosting won't keep.
