1 tsp. olive oil
1/3 c. minced onions
1/3 c. sliced carrots
3 c. sliced mushrooms
1 tsp. ground sage
tsp. thyme
tsp. black pepper
c. dry red wine
2 cans of beef broth
c. tomato paste
2 oz. uncooked small bowtie pasta

Directions:

Heat oil in large saucepan over medium heat until hot. Add onions and carrots and cook for 2 minutes. Add mushrooms, sage, thyme, and pepper. Cook and stir for 5 minutes or until mushrooms are soft. Add wine and cook for 2 minutes or until wine is reduced by half. Add broth and bring to boil over a med/high heat. Add tomato paste and pasta. Cover and cook (stirring occasionally) for 10 to 12 minutes until pasta is tender.
