3/4 c long grain rice
lemon juice
2 T oil
1 tomato, chopped
1 bell pepper, chopped
1 clove garlic, minced
1 T chicken stock base
1 c hot water
1 tsp cumin
salt and pepper

Directions:
Directions:
Cover rice with hot water. Add a squirt of lemon juice and let soak for 5 minutes. Drain thoroughly in a colander.
Heat oil in a large skillet. Add rice and saute until golden. Drain any excess oil. Stir in tomato, bell pepper, and garlic. Saute for 2 minutes. Add chicken stock base dissolved in the water and seasonings. Reduce heat, cover, and simmer 15 minutes. Do not remove the lid while rice is cooking. Fluff with a fork.
