Vanilla Ice Cream

1 Cup sugar
3 Cups white wine or white grape juice
3 Cups water
Zest of 1 orange 1/x 3' strips
1 cinnamon stick
8 whole cloves
2 tsp vanilla extract
6 slightly underripe Bosc Pears, peeled and cored with stems

Chocolate Sauce
1/3 cup heavy cream
1/3 cup Frangelico Liquer
1/4 cup sugar
pinch of salt
8 oz semisweet Chocolate chips

Directions:
Directions:
In a soup pot, combine all ingredients except pears and bring to a boil.

Add pears and simmer for 20 minutes until pears are tender.

Remove pears and refrigerate for at least 2 hours.

Chocolate Sauce: Bring cream, liquor, sugar and salt to a boil in sauce pan. Remove from heat, add chocolate and cover. After 3 minutes, blend in the chocolate until sauce is smooth.

Assembly: Place sarge spoonful vanilla ice cream in dessert cups. Stand chilled pear in the ice cream. Spoon warm chocolate sauce over the pears. Serve immediately.
