3 or 4 lb. corned beef brisket
1/2 c. chopped onion
2 clove garlic, minced
6 medium potaotoes, pared
6 medium carrots
6 cabbage wedges

Directions:
Directions:
Place beef brisket in large pot or Dutch oven, barely cover with water. Add onion, garlick and 2 bay leaves (optional). Cove and simmer for 3-4 hours or until tender. Remove meat from liquid. Keep warm. Add potatoes and pared carrots. Cover and bring to a boil. Cook 10 minutes. Add cabbage wedges and cook 20 minutes longer.

If desired, meat may be glazed. Spread meat lightly with mustard, then with a mixture of 1/4 cup brown sugar and a dash of ground cloves. Bake in moderate oven in shallow pan at 350 for 15-20 minutes.
