Hearty Winter Vegetable Beef Soup Recipe

3 onions, chopped
2 tbsp. butter
1 lb. lean ground beef
1 clove garlic, minced
3 c. beef stock
2 lg. cans tomatoes
1 c. each of potatoes, celery, green beans and carrots, all cut up in one inch chunks
11/2 c. Burgundy wine
Worcestershire sauce
garlic powder
Italian seasoning
Parmesan cheese
1 tbsp. chopped parsley
1/2 tsp. basil
1/4 tsp. thyme
salt and pepper

In a soup kettle, cook onions with butter until they are tender and golden; stir in ground beef and garlic. Cook the mixture, separating the beef with a fork, until brown. Add beef stock, tomatoes, vegetables, wine, and seasonings. Bring to a boil, reduce heat and simmer for 1 to 11/2 hrs.
