3-4 cups Zatarains long grain rice
2 lbs lean pork cajun sausage
2 lbs lean pork meat (cubed) or you can use chicken
4 large yellow onions
Minced garlic or garlic powder
Black pepper
Tonys seasoning
Louisiana hot sauce
cup vegetable oil

Directions:
Directions:
1. Slice sausage into pieces and brown on both sides in large black cast iron pot. (cook out most of the fat) over a medium heat. Remove when browned.

2. Pre-season pork (chicken) meat with some of the seasonings. Brown in same pot, in sausage drippings. Remove when brown.

3. Add cup oil, increase to medium high heat. Quarter slice onions and brown in hot until wilted may take 20-25 minutes.

4. Remove onions to strainer, let oil drip out. Remove all excess oil from pot. Put on high heat until drippings start to smoke. Quickly add water (use 5 cups water for 3 cups rice or 6 cups water for 4 cups rice) Stir up dripping until all loose from the bottom of the pot, should make a brown gravy. Bring to a boil; add seasonings, sausage and meat. Simmer on medium heat for 10 minutes.
** Sample gravy for taste/seasonings before adding rice.

5. Add dry rice stir-in, reduce heat to medium low, cover. Cook for about 1 hour. Do not stir for first 40 minutes, then stir once and recover. Continue to cook until rice is tender and cooked
