1/2 cup oil

Directions:
Directions:
Heat oil in a large skillet. Chop vegetables. Roll in a mixture of 1/2 cornmeal and 1/2 flour, garlic, salt and pepper. Cook in hot oil until vegetables are done and lightly browned, stirring occasionally.
