7 lbs. cucumbers
2 or 3 green peppers
2 or 3 onions

2 cups salt
enough water to cover

1st. solution:
2 cups vinegar
2 quarts water
1 tsp. alum

2nd. solution:
4 cups vinegar
6 cups sugar

Grind cucumbers, onions and peppers. Cover with brine of 2 cups salt and enough water to cover well. Let stand for 3 days; stir occasionally; drain.
Cover with clear water and let stand 24 hours. Drain; make solution of 2 cups vinegar, 2 quarts water and 1 tsp. alum. Bring to a boil; add cucumbers and simmer 20 minutes. Drain; make solution of 4 cups vinegar, 6 cups sugar and spices, if desired. Bring to boil and add cucumbers. Simmer 10 minutes. Put in jars and seal.
