2 1/2 cup flour
3/4 tsp. salt
1 cup shortening
1 egg, separated
milk
4 tbsp. (level) tapiocia
1/4 tsp. cinnamon
sliced apples
2 tbsp. flour

Directions:
Directions:
Mix flour, shortening and salt together. Separate egg putting yolk into measuring cup. Add enough milk to make 2/3 cup liquid with yold and mix with blended ingredients. Roll out half of the pastry and place in baking pan. Cover with sliced apples; then sprinkle mixture of sugar, cinnamon, 2 tbsp. flour and tapiocia over apple slices. Cover with remaining half of dough rolled out as for pastry. Beat egg white until foamy and brush over top of dough. Bake in 425 oven for 10 minutes; then finish at 375 for 20-25 minutes. Cut into bars.
