1 1/4 cup sugar, divided
1/2 cup flour
1 1/4 cup boiling water
1 lemon
1 orange
3 eggs
1/2 tsp. salt

Directions:
Directions:
Mix the sugar and flour; stir in the boiling water directly over heat until thick. Cook over hot water for 15 minutes. Gradually add slightly beaten egg yolks, the juice of lemon and the grated rind and juice of orange. Cook until thick; cool. Make a meringue of the egg whites, 1/2 cup granulated sugar and a teaspoon of lemon extract. Fold 1/4 of this into the filling and pour into crust. Top with the rest of the meringue. Cook in slow oven at 300 for about 15 minutes.
