2 med tomatoes, chopped
1 can black beans, rinsed
1 can corn, rinsed
1 green pepper, chopped
1 bunch cilantro, chopped
1 tsp. sugar
1/3 cup rice vinegar
1/3 cup olive oil

Directions:

Combine all ingredients. Refrigeration will change the flavor of this dish. It is best to serve fresh but will keep several hours without refrigeration.

You can double or triple this recipe easily. 1/2 cup oil and vinegar will do even at triple the recipe.
