1 lb ground beef
1/2 cup chopped onions
1 clove minced garlic
2 cups diced tomatoes
3/4 cup rice (uncooked)
2 tablespoons worchestire sauce
Salt & Pepper to taste
1 cup shredded cheddar cheese
2 large zucchini, sliced and unpeeled
1/2 cup shredded monterey jack cheese
1 cup sour cream
1/2 cup shredded cheddar cheese

Directions:
Directions:
Preheat oven to 350. Brown beef, onion and garlic until beef is no longer red. Add tomatoes, rice, worchestire sauce, salt and pepper. Cook until rice is tender. Add 1 cup cheddar cheese. Cook zucchini in small amount of water until tender (approximately 7 minutes). In a 2 quart baking dish, layer 1/2 meat mixture, then well drained zucchini, monterey jack cheese, remaining meat mixture, sour cream and top with 1/2 cup shredded cheddar cheese.
Bake in preheated oven for 30 minutes.
