12 10 inch flour tortillas
1 large onion, chopped
2 tbsp. cooking oil
4 cups or 2 15oz cans refried beans
1 large tomato, chopped
3 cups shredded cheddar cheese
1 cup shredded lettuce
1 medium avocado, seeded, peeled and cut in 12 wedges

Wrap stack of tortillas tightly in foil; heat in 350 oven for 15 minutes. Cook onion in oil till tender but not brown. Add refried beans, cook and stir till heated through. Lightly salt tomatoes. Spoon 1/4 cup bean mixture onto each tortilla near one edge; top with cheese, lettuce, tomato and avocado wedge. Fold edge nearest filling up and over filling just till mixture is covered. Fold in two sides envelope fashion, then roll up. Arrange on a baking sheet. Bake in 350 oven about 15 minutes or till heated through. Serve with salsa. Recipe variation: Turn these into Chimichangas by omitting baking step and frying tortillas in 1/2 inch hot fat about 1 minute on each side or till golden brown. Drain on paper towels. Keep warm in 300 oven while frying remaining chimichangas. Garnish with lettuce, guacamole and radish roses.
