1 gallon zucchini peeled, seeded and cut in 1 inch cubes
1 cup hydrated lime pickling lime

Directions:
Directions:
Dissolve in 1 gallon water. Stir lime in small amount; add to remaining water in crock. Add zucchini. Soak 24 hours. Pour off and rinse in cold water; run 10 min. Drain on towel for 3 hours. Replace in crock.
6 cups vinegar
10 cups sugar
heat warm enough to dissolve sugar.
2 tbsp. pickling spices
Pour over pickles; let stand 24 hours. Bring to boil for 35 minutes. Add green food coloring.
