1 1/2 pound ground meat
1 large onion
1 green bell pepper
1 rib of celery stalk
1 clove garlic
1 bay leaf (optional)
1 sprig thyme
1 tsp salt
dash cayenne pepper (optional)
2 can tomato sauce
1 large can of mushrooms
3/4 cup sharp cheese, grated

Directions:
Directions:
Brown ground meat in skillet, drain and move to bown. add bacon dripping or oil in skillet and saute onion, green pepper, celery and garlic until onion is slightly browned. add bay leaf, thyme, seasoning, tomato sauce, and browned meat, simmer slowly for 1 to 1 1/2 hours. a little water may be added if sauce becomes too thick. stir occasionally to prevent scorching. meanwhile, cook spaghetti in boiling, salted water until tender, drain. when meat and sauce are done, combine with spaghetti and mushrooms in a casserole, and top with the grated cheese cover and bake in oven at 350 for 30 minutes. remove cover for the last 10 minutes of baking to brown slightly.
