1 cup buttermilk baking mix
4 eggs, beaten
1/2 cup vegetable oil
1/2 cup parmesan cheese
1/2 cup chopped onion
2 Tbsp. chopped fresh parsley
1 garlic clove, minced
1/2 tsp. seasoned salt
1/2 tsp. dried, crushed oregano
Dash of fresh ground pepper
2 medium zucchini, thinly sliced

Directions:
Directions:
Combine all ingredients except zucchini; beat well.

Stir in zucchini. Pour into greased 13x9 inch baking dish.

Bake at 350 for 35 minutes or until golden brown. Let stand 10 minutes before serving.
