7/8 to 1 oz. dried mushrooms*;
1 cup boiling water;
1 tbs olive oil;
1 cup sliced fresh mushrooms;
1/3 cup finely chopped carrot
1 medium (1cup) leek, halved lenthwise, sliced 1/4";
1/2 tsp minced fresh garlic;
1/2 cup barley;
3 (14 1/2 oz) cans low sodium chicken or vegtable broth;
2 tsp dill weed;
1/2 tsp. salt;
1/2 tsp pepper ;

Directions:
In a medium bowl place dried mushrooms. Pour boiling water over dried mushrooms; let soak 1 hr.. Drain; RESERVE SOAKING LIQUID. Slice fresh mushrooms.
In Dutch oven heat oil; add soaked mushrooms, fresh mushrooms, carrot, leek and garlic; cook over medium heat, stirring occasionally until vegetables are softened (6 to 7 minutes); Stir in mushroom soaking liquid, barely, broth, and dill.Continue cooking until mixture comes to a full boil (10-15 minutes); Cover; reduced heat to low. Continue cooking until barley is tender (about 1 hr.) Stir in salt & pepper.

*Use porcini, morel, chanterelle or oyster mushrooms. Avoid shitake as they take longer to rehydrate.
