Ingredients:  
1 egg (beat slightly with a fork)
1/2 c. milk
1/4 c. melted shortening
1 c. finely diced unpeeled apples
Mix the above ingredients. Add the following;
1 1/2 c. flour
1/2 c. sugar
2 t. baking powder
1/2 t. salt
1/2 t. cinnamon

Directions:
Directions:
Put into cupcake holders. Sprinkle each muffin with topping.
Topping:
1/3 c. brown sugar
1/2 t. cinnamon.
Bake 350 for 25 minutes.
