3 to 4# small red boiled potatoes
1 small chopped onion
1/4 cup chopped celery
5 slices fried crumbled bacon
bacon grease
1/2 cup vinegar
1 cup water
1 cup sugar
1 tsp. salt
1/8 tsp. black pepper
1 Tbsp. cornstarch
1 Tbsp. flour
cold water

Directions:
Directions:
Boil potatoes in salt water, peel and slice. Chop onion & celery fine and add to potatoes. Remove fried bacon from grease & sprinkle over potatoes. To bacon grease add: vinegar, water, sugar, salt & pepper. Bring to a boil and thicken with cornstarch & flour that has been mixed with cold water. Boil til clear and glossy. Pour hot mixture over potatoes & mix gently. (Option: can add celery seed if desired) To serve warm, heat in a Nesco at very low temperature.

This recipe is from Grandma Scherbarth and has been passed on to my Mom's generation and now to us. It is the best German potato salad I have ever had.
