1/2 lb. thick-sliced bacon
4 (1lb 3oz) cans baked beans
2 tsp dry mustard
1/4 tsp ground ginger
1/4 cup strong coffee
1/2 cup firmly packed dark brown sugar
1/2 cup dark rum
1 (8 1/4 oz) can sliced pineapple, drained

Directions:

Cut bacon into 2 inch lengths. In a wide frying pan over medium heat, cook bacan until crisp; drain and set aside.

Combine beans, mustard, ginger, coffee, brown sugar and bacon. Turn into a 3 quart casserole or a 9 x 13 inch baking dish. (At this point you can cover and refrigerate until next day.)

Bake, uncovered, in a 350 oven for 45 minutes.

Stir in rum. Cut pineapple slices in half and arrange over top. Return to oven, uncovered, for about 25 minutes more or until top is browned.

I found this recipe online. You know how you go to get togethers and you look for something different to bring. Well...I haven't tried this one yet...but doesn't it sound good. Whoever tries this first, let me know. The RUM, coffee and pineapple caught my eye on this one : )
