1c. herbs choose of thai basil,cilantro,mint
6-8oz. shrimp or avocado or raw tuna
finely chopped scallion
1c.bean spouts
1c.red cabbage
2c. fresh spinach-clean and dryed
large round dry rice papers

Directions:
Directions:
Soak rice papers in warm water a few at a time for a few minutes and flip over. When soft, gently remove. Lay on towel and pat dry. Lay down 4 herb leaves face down first right across the middle of paper. Then top with thin slice of meat. Then follow with layers of shredded ingredients. Fold up sides and roll up, not too tight! Lay on platter with semi-damp towel. Don't let rolls touch. Serve, cut in half, with peanut sauce

As I got older after gaining weight from eating the best steak sub, rigatoni, and trifle at the resturaunt at the age of 11, and eating all those eggrolls, pizza, popovers, meatballs, pepperoni rolls and frankenberry, and booberry, and those candy jars at the house, just to name a few favorites, I found the to-go plate very exciting!
