1 10 ounce package frozen chopped spinach, defrosted
4 eggs, beaten
3/4 cup cream
1-1/4 cups milk
salt and pepper to taste
2 tablespoons lemon juice
2 tablespoons parsley, chopped
1/4 pound feta cheese, crumbled
3 tablespoons fresh grated parmesan or romano cheese

Directions:
Directions:
drain spinach and squeeze out moisture, it should be fairly dry.
mix, eggs, cream and milk, add salt, pepper, lemon and parsley.
stir in spinach and feta.
fill quiche pan and place the parmesan cheese on top.
bake at 375 for 30 to 40 minutes, until knife inserted in center comes out dry.
cool 10 minutes before serving
